Delicious Easter Carrot Cake Recipe by HYSa Kitchen

For the cake

  • 2 cups flour (260g)
  • 4 eggs
  • 1 cup vegetable oil (200g)
  • 1/2 cup brown sugar (60g)
  • 1 cup white sugar (140g)
  • 1/2 tsp salt (3g)
  • 1.5 tsp cinnamon powder (8g)
  • 2 tsp baking powder (8g)
  • 1 tsp vanilla extract (5g)
  • 2 cups grated carrots (300g)
  • 1/2 cup chopped walnuts (30g)
  • 1/2 cup raisins (30g)
For the topping
  • 200g cream cheese
  • 75g butter
  • 1 cup icing sugar (100g)
  • 1 tbsp lemon juice (10g)
  • 1/2 cup toasted chopped walnuts (60g)


  1. 1. Peel and grate 2 cups of fresh carrots.
  2. 2. In a bowl, mix 2 cups of flour, 1/2 tsp salt, 2 tsp baking powder, and 1.5 tsp cinnamon powder. Add 1/2 cup of chopped walnuts and 1/2 cup of raisins to your liking.
  3. 3. In a separate bowl, whisk 4 eggs, 1/2 cup of brown sugar, 1 cup of white sugar, 1 tsp vanilla extract, and 1 cup of vegetable oil. Mix until there are no dry powders.
  4. 4. Add the grated carrot to the mixture and mix well.
  5. 5. Grease an 8-inch deep cake mould and pour in the batter.
  6. 6. Bake the cake in your HYSapientia air fryer oven in cake mode(140℃) for 1 hour or until a toothpick comes out clean.
  7. 7. While the cake is cooling, make the cream cheese sauce. In a mixing bowl, whip together 200g of cream cheese, 75g of butter, 1 cup of icing sugar, and 1 tbsp of lemon juice until smooth.
  8. 8. Once the cake has cooled, layer it down the middle with the cream cheese sauce. Smear the top with the remaining cream sauce and sprinkle with the toasted chopped walnuts.
