Vegan Lemon Cake Recipe - HYSA KITCHEN



  • 100ml vegetable oil, plus extra for the tin
  • 275g self-raising flour
  • 200g golden caster sugar
  • 1 tsp baking powder
  • 1 lemon, zested, 1/2 juiced
  • For the icing
  • 150g icing sugar
  • ½ lemon, juiced


  1. 1. Grease and line a 1lb loaf tin with baking parchment. Combine the flour, sugar, baking powder and lemon zest in a bowl. Add the oil, lemon juice and 170ml cold water and mix until smooth.
  2. 2. Fill the jars with the mixture. 30 minutes in HYSapientia air fryer oven of baking time, or until skewers are clean. After 10 minutes, take cakes from tins and place them on wire racks to finish cooling.
  3. 3. Pour the icing sugar into a bowl. Add enough lemon juice to the icing to make it thick enough to spread on the bread (if the icing is too thin, it will run off the cake). Recipe from HYSA KITCHEN.
